Homage to the Bovine Aged Topside Beef

This local pasture-fed beef is from stress-free cows that have been put out to pasture at retirement. They are outside from February until November and inside for the shortest possible time to shelter from the relentless Cornish rain. The beef is hung for 28 days and quality controlled at the farm's kitchen table to ensure a tender and flavoursome beef.
