Cornish Blue is a characteristic, semi-soft vegetarian cheese made from pasteurised cows milk; it is dry salted by hand and matured for 12-14 weeks. Unlike the salty tang of other blue cheeses, it has a sweet mild flavour with a creamy richness and dense, sticky texture comparable to Gorgonzola.
